I used to listen to this Nirvana Unplugged in repeat when it was released...their cover of The Man Who Sold the World remains unequaled.
My second best is Oasis covering Helter Skelter.

That Nirvana one is a great one, the whole Unplugged. Brings back a lot of memories! Sad ones as well, because I got to hear it the first time shortly before Cobain's death so I cannot listen to that concert without feeling very melancholy. Nirvana was one of my first musical loves.
Two that come to mind:
Oasis - My generation (The Who) --- that quite literally turned me into a fan after all those years or at least it was the first step, two years ago.
REM - Crazy (Pylon) --- for years I had no idea that it was a cover and it was one of my favorite as-I-thought-REM songs. Stipe always sounds absolutely gorgeous to me, but especially in that song.
PS: Speaking of Nirvana, but of course, that's a cover as well, D-7 (Wipers)!

I listened to this for a year whenever I craved Kasabian's Cosmic Dancer
